Flourless Almond Meal Muffins!

Here’s a tip for storing your almond meal for use in baking.

When you are done straining for milk, spread the meal on a cookie sheet and bake at a low temp until it’s crunchy. Pulverize in a food processor for that fine flour consistency, Then store and freeze. In this recipe, half was flour texture, but the other half was very grainy because I didn’t pulverize it before freezing. I just prefer the grainy texture, kind of like white vs. wheat bread texture. Now…on to the good stuff.

Okay, these came out surprisingly better than I expected! The first batch wasn’t 100% but still delicious, the only problem being they were very crumbly, so I added another teaspoon of baking powder and the second batch was PERFECT!

However, I had a duh Holly moment and forgot to add the sweetener to the second batch. Good news friends:

it doesn’t really need it. (especially if using dried fruit) 

But if you prefer, only add about half of the sweetener. Here’s the basic recipe after I tweaked it:

Flourless Almond Meal Muffins

2 cups flour meal (loose, not packed)

2 teaspoons baking powder

1/4 oil of your choice (I used olive)

2 eggs

2 tablespoons (eh, probably more, i just threw it in there) flax seed meal

2 Tablespoons cinnamon

1 tablespoon pure vanilla extract

1 cup (or more if you prefer) berries of your choice. I used dried cranberries the first time, and raisins the second. both were wonderful. Next time I’m using dates.

I used 1/3 cup sweetener the first batch, but second batch I didn’t use any and they were still great–the dried fruit gave it enough sweetness, but if you wish, maybe only use a 1/4 cup sweetener?

All you do is mix everything together in a bowl, grease your muffin tin and bake at 350 for 20 mins. this only makes 6, though, so they’ll be gone just as quick as they were made!

The awesome thing about this recipe is that it’s a base and you can modify it to whatever flavour suits you best! throw in some choc chips if you want. or add some pumpkin spice, or cocoa powder instead of cinnamon. Get creative and find what works for you. Don’t be afraid to throw out the measuring utensils and just experiment, it’s how you learn! 🙂
